Ingredients

0.5onion
finely chopped
4 clovesgarlic
minced
4carrots
medium, roughly chopped
1 cupred lentils
4 cupsvegetable broth
adjust to your thickness preference
1 cuplite coconut milk
1 tablespoonmiso paste
2 tablespoonsharissa
0.5juice from lemon
½ teaspoonsalt
1 teaspoonza'atar
½ teaspoonpaprika
black pepper
to taste
1 tablespoonnutritional yeast
4 tablespoonspumpkin seeds
Instructions
Step 1
Heat oil in a pot over medium heat. Add onions and cook for 5 minutes. Add garlic and carrots and cook for 3 more minutes.
Step 2
Add all remaining ingredients to the pot and cook for 20-25 minutes, until carrots are soft.
Step 3
Add soup to a blender and blend until smooth. Serve and enjoy.
