Instructions

Step 1
Add all ingredients except oil to a large bowl and stir until combined. If the batter seems thick, add a little almond milk.
Step 2
Heat a pan over medium heat and spray with a little cooking spray or coconut oil.
Step 3
Spoon pancake batter onto your pan (smaller pancakes will be easier to work with) and cook for a few minutes on each side.
Step 4
Stack em up! Serve with some fresh fruit and sugar-free syrup.
