High protein pancakes no protein powder
For those of you who are team sweet this pancake day, here are our viral cottage cheese pancakes with over 27g of protein and no protein powder in sight.

There is no better way to start your day than with a plate of pancakes but we may not traditionally think of them as the healthiest breakfast option but with a few simple swaps these will hopefully keep you feeling good and satisfied until lunch.
Combining carb containing foods with a source of fibre, protein or fat can slow the rate at which sugar is absorbed into the bloodstream leading to a smaller blood sugar spike which may help you to feel fuller for longer.
So the combination of oats with cottage cheese (protein), nuts and raspberries (fat and fibre) means you can have your (pan)cakes and eat them too! We’re so excited for you to try this one, here’s how to make them:
50g oats
1 banana
150g cottage cheese
1 egg
a pinch each of salt, baking powder and cinnamon
A splash of water or milk
Toppings: we used greek yogurt, frozen raspberries, walnuts and a drizzle of honey.

Step 1
Add the oats to your blend and process into a flour
Add the remaining pancake ingredients to the blender and blend until smooth, start with a splash of milk/water and add more if needed, the batter should be thick but pourable - we recommend adding less than you think and testing your first pancake and adding more if needed.
To a hot pan, add a little butter or oil then a couple of tbsp of pancake batter per pancake
Cook for a few minutes on each side and serve with toppings of your choice
