Instructions
Step 1
Heat olive oil, add carrots, celery, & onion. Sauté until onion becomes translucent (approx. 8 minutes)
Step 2
Add garlic and sauté 1 minute more. Once veggies have softened, add broth and beans. Simmer 20 mins
Step 3
Scoop out 2 cups of the soup, and purée (to thicken) add back into the pot. Add spinach and meatballs and cook through.
Step 4
Add salt, pepper, and pecorino to your liking.
