Finely dice red onion, garlic and sundries tomatoes

Blend almonds/cashews, nutritional yeast and plant based milk until smooth.

Add oil to pan, fry off onions and garlic for a couple of minutes before adding in sun dried tomatoes and dried herbs

Step 4
Add the whole can of butterbeans (and their water) to the pan and mix well over a med heat

Add the ‘cream’ made in the blender earlier. Mix through and bring to simmer.
Step 6
Add spinach, black pepper and tear up and add fresh basil.
Step 7
Give it a good final stir and then serve.
