Instructions

Step 1
Heat a large skillet over a low-medium heat and add the ghee.
Step 2
Gently fry the onion, garlic and chili for 5 minutes until the onion has softened. Add the dry spices and cook for a further 1-2 minutes until aromatic
Step 3
Pour in the eggs and lower the heat. Stir slowly to scramble the eggs as they cook, and remove from the heat while they are still a little runny.
Step 4
Add in the chicken and cilantro and continue stirring off the heat for 1 minute more until the eggs are just set.
Step 5
Divide the rocket between 2 plates, top with the cooked eggs and serve immediately.
