Steps:
1. Finely dice garlic, capsicum, onion, Parsley and chorizo, add to bowl. 2. Crack and whisk beaten eggs into your bowl, add your spices and half your cheese. 3. Fry and scramble the mixture until the vegetables have begun to brown. Put aside. 4. Prepare your tortillas, add the rest of your cheese on half of each tortilla, then pour over top of the cheese your mixture. Fold the rest of the tortilla over the mixture. You can cut this half circle in half again to make quarters. 5. Pan fry each side of the tortilla until crispy or golden brown. 6. Enjoy!!
