Instructions

Step 1
Preheat oven to 375⁰F
Step 2
In a large baking dish, mix together uncooked rice, chicken broth, chopped onion, minced garlic, sundried tomato, baby spinach, dried oregano, dried basil, and salt and pepper
Step 3
Place the chicken breast on top of the rice mixture
Step 4
Sprinkle grated parmesan cheese all over the chicken and rice
Step 5
Cover the baking sheet with foil and bake for 35-40 minutes or until the chicken is thoroughly cooked, and the rice is tender.
Step 6
Remove the foil and broil for an additional 5 minutes or until the cheese turns golden brown and bubbly.
