Oxtail Potjie in beer broth

Slow cooked oxtail potjie, with beer and sweet vegetables.
It's a great recipe to prepare and cook with friends.
Potjie can be replaced with normal cooking pot or dutch oven.
Optional: replace beer by white wine.
Or add a few dried apricot for extra sweetness.
Refrain from adding too many other spices that may overpower the taste of the listed ingredients.

Ingredients

3 table spoonsun flower Oil

8garlic cloves
roughly chopped

1Oxtail

salt

pepper

3onions
large

1can diced tomatoes

660mlBeer
or 3/4 bottle of white wine

3Chicken stock cubes

750gbutter beans

3Carrots
chopped in large pieces

6Sweet potatoes
chopped in large pieces

3potatoes
large, chopped in large pieces

0.5Butternut
chopped in large pieces
Instructions
Step 1
Heat oil on medium, add oxtail, garlic, salt and pepper.
Step 2
Braise until golden
Step 3
Add onions and cook until soft
Step 4
Add tomatoes and cook for a few minutes
Step 5
Add 660ml of beers or a 3/4 of bottle of white wine.
Step 6
Add chicken stock when and leave it to simmer 30min
Step 7
Then add butter beans and water until covered. Simmer 1.5hrs
Step 8
Add Carrots, sweet potatoes, potatoes and butternut in this order. DO NOT MIX and simmer for a further 45min or until nice and soft.
Step 9
Serve by itself, with bread, with couscous or rice. Enjoy!
