Chickpea Curry with Brown Rice

Instructions

Step 1
Prepare the rice as per package instructions.
Step 2
Take a skillet, and heat oil over the medium heat.
Step 3
Put onions into it.
Step 4
Add pepper and salt; cook until onions are caramelized and dark brown for around 10 minutes.
Step 5
Add garlic and curry powder; cook for almost 30 seconds.
Step 6
Add vegetable stock; stir.
Step 7
Mix chickpeas, honey, sriracha, and coconut milk, and bring it to boil.
Step 8
Lower the heat; simmer for almost 10 minutes. Adjust seasoning if required.
Step 9
Put naan in a microwave to warm it, and serve it with curry on the rice.
Step 10
Garnish with cilantro, and serve.
