Ingredients
2 servings
½ cuppearl couscous
¾ cupwater
1 Tbspgroundnut oil
2garlic cloves
chopped
1spring onion
sliced
1carrot
diced
1red capsicum
diced
½ cupfrozen peas
thawed
2eggs
large, whisked
1 Tbspsoy sauce
1 Tbsphoisin sauce
2 tsprice wine vinegar
½ tspsesame oil
½ Tbspsriracha
optional
black pepper
to season
sesame seeds
to garnish
Chilli flakes
to garnish, optional
Instructions
Cook couscous
Step 1
Add couscous into a saucepan along with the water. Bring to a boil then turn the heat to low.
Step 2
Cook for about 12 minutes or until the couscous is becoming tender.
Step 3
Remove from the heat and allow to cool.
Cook vegetables
Step 4
Heat oil in a wok over high heat. Add in garlic and fry for about 30 seconds, taking care not to burn.
Step 5
Add in spring onion whites and fry for a minute.
Step 6
Add in carrot, capsicum and peas and fry for about 2 minutes. Reduce the heat to medium and slide the veggies to one side.
Step 7
Pour eggs into wok and scramble. Take care not to overcook.
Step 8
Return the heat to high and add in soy sauce, hoisin sauce, vinegar, sesame oil and sriracha (if using).
Step 9
Add in cooled couscous and black pepper, toss together until mixed.
Step 10
Serve garnished with spring onion greens, sesame seeds and chilli flakes (if using).
