Ingredients

1kglamb
or mutton, cut into pieces
1 cupoil
1onion
large, sliced
4tomatoes
large, halved
1 tablespoonginger paste
1 tablespoongarlic paste
1 tablespoonchili paste
salt
to taste
1 teaspoonred chili powder
1 teaspooncumin powder
1 teaspooncoriander powder
1 teaspoonblack pepper
4green chilies
for garnish
Ginger
julienned for garnish
Fresh coriander
chopped for garnish
1 piecescharcoal

Instructions
Step 1
In a wok, add the meat, sliced onions, crushed ginger, garlic, green chilies, and salt. Pour in enough water to cover the meat.
Step 2
Cover the wok and let the meat cook until it is almost tender.
Step 3
Remove the lid and cook on high heat until only about 1/4 of the water remains.
Step 4
Add the tomatoes halves and continue cooking until the tomato skins loosen and can be easily peeled off.
Step 5
Use a spatula to crush the tomatoes in the wok.
Step 6
Add chili powder, black pepper, cumin powder , and coriander powder to the wok and mix well.
Step 7
Cook until the mixture reaches a gravy consistency.
Step 8
Add oil to the wok and cook on high heat for an additional 3-4 minutes.
Step 9
Place a piece of live charcoal in the wok on a small boil or aluminium foil, drizzle oil , cover with a lid and let it smoke for about 5 minutes to infuse a smoky flavor into the dish.
Step 10
Remove the wok from the heat and garnish with chopped coriander, julienned ginger, and green chilies.
Step 11
Serve hot with naan or rice. Enjoy your flavorful mutton koyla karahi!
