Tricolor Pepper Bruschettas

Instructions

Step 1
Preheat the oven to 350°F (175°C).

Prepare the peppers:

Add 1 tablespoon of olive oil to a medium-sized pan and heat over medium heat.
Step 3
Sauté the red, yellow, and orange bell peppers for 10 minutes, stirring occasionally until tender.
Step 4
After 10 minutes, turn off the heat and mix in the brown sugar and capers. Set aside.

Prepare the bread:

Slice the baguette into no more than 1-inch slices.
Step 6
Arrange the bread slices in rows on a pan lined with parchment paper.
Step 7
Mix the ¼ cup of olive oil with salt and pepper to taste in a small bowl.
Step 8
Brush both sides of the bread slices evenly with the olive oil mixture. (If you don’t have a brush, refer to the notes below.)
Step 9
Toast the bread slices in the oven for 7 minutes or until golden brown. (I used the “toast” function on my oven, but any method works as long as the slices achieve a golden brown color without becoming too hard.)

Prepare the Toppings:

Cut the cherry tomatoes in half lengthwise, or into quarters if they are large.
Step 11
Chop the basil and add it to the tomatoes.
Step 12
In a medium-sized bowl, mix the sautéed peppers and cherry tomatoes.

Assemble the Bruschettas:

Slice the Brie cheese thinly using a sharp knife.
Step 14
Pinch the garlic clove with a fork and rub one side of each toasted bread slice with it.

Place a thin slice of Brie cheese on the garlic-rubbed side of each bread slice.

Top with the pepper and tomato mixture.

Arrange the bruschettas on a cutting board and drizzle with balsamic vinegar.

Garnish with basil leaves.

NOTES: Using tricolor peppers makes the bruschettas look vibrant and beautiful, but you can use any one color if preferred. If you don’t have a cooking brush, you can fold a piece of parchment paper several times and cut fringe into one side to create a makeshift brush. Use the fringed side to brush the olive oil onto the bread slices.
