kalamata olives

fresh or freeze dried

Persian cucumbers
or mini, diced

Canned chickpeas
drained and rinsed

Baby spinach
or those bagged salads that has mostly spinach

or red bell pepper, diced, optional

Red onion
finely diced, optional

feta cheese

lemon juice

Red wine vinegar
or white vinegar

olive oil

black pepper

dijon mustard

Maple syrup
or simple syrup, optional
Instructions
Step 1
Cook rotini 8m for al dente, and cool it off to at least room temp
Step 2
Make the dressing with olive oil, vinegar, black pepper, lemon juice, Dijon, a tiny bit of syrup (optional)
Step 3
Toss in all other ingredients to taste, obviously go easy on the sweetener and Dijon but everything else go nuts
