Instructions

Step 1
In a skillet over medium high heat begin warming your oil

Add rotisserie chicken, seasoning and lime juice
Step 3
Mix well until the chicken is fully coated with seasoning

Add salsa, diced tomatoes, drained beans and corn

Mix until well combined
Step 6
And rice and broth, mixing until the rice is fully covered by the liquid

Bring to a simmer

Once simmering turn the heat to low and top with cheese

Cover and cook for 15 minutes
Step 10
Once done, let sit for 10 minutes before serving

I like to garnish with cilantro and serve with sour cream or plain greek yogurt
