Hommus Bowl with Pearl Couscous and Vegetables

Ingredients
3 servings
6 ozGrape Tomatoes
halved
1clove garlic
minced
1 Tbspfresh basil
finely chopped
1 Tbspextra virgin olive oil
2 tspbalsamic vinegar
salt
black pepper
to taste
6 ozPersian Cucumber
or English, cut into 1/4 inch slices
¼ cupRed Onion
thinly sliced crosswise, or about 1/4 of a medium sized red onion
1 TbspLemon Juice
more to taste
1 tspextra virgin olive oil
5 ozPearl Couscous
I used 1 5 oz box of Basil & Herb Near East Pearled Couscous Mix
2 ozSpinach Arugula Mix
1 Tbsplemon juice
2 tspextra virgin olive oil
6 TbspFeta
or about 1 oz per person
6 Tbspbasil pesto hummus
or the hommus of your choice
Instructions
Tomato Salad
Step 1
Combine all tomato salad ingredients in a bowl. Taste and adjust any ingredients as desired.
Cucumber Salad
Step 2
Combine all cucumber salad ingredients in a bowl. Taste and adjust any ingredients as desired.
Other
Step 3
Cook couscous according to package instructions. I used a box of Near East Basil & Herb Pearled Couscous mix.
Step 4
Toss spinach & arugula mix with 1 tbsp lemon juice and 2 tsp extra virgin olive oil.
Step 5
Assemble. Evenly divide the dressed spinach & arugula among serving bowls. Evenly spoon the cooked pearl couscous on top of the greens. Evenly divide the tomato salad, cucumber salad, feta, and pesto hommus between the bowls.
