Instructions
Step 1
In a large pot, heat the oil and gently fry the onion for about 3 minutes. Add garlic and ginger and fry for another minute.
Step 2
Turn the heat low and add spices
while stirring.
Step 3
Add stock, lentils, canned tomatoes,
and cook for about 20minutes, or until lentils are fully
cooked.
Step 4
Add the coconut milk, stir well and cook for a further 15-20 minutes.
Step 5
Serve with basmati rice and plain yoghurt
