Blueberry French toast bagels

Instructions
Step 1
In a large mixing bowl, whisk together 2 & 1/2 cups of bread flour (or all purpose), 3 tosp of maple sugar (you can substitute this with any granulated sugar), 1 tsp of instant yeast, 1 tsp of cinnamon, and 1/2 tsp of salt.
Step 2
- Mix in 1/2 cups of fresh blueberries.
Step 3
- Mix in 1/4 cup of water and knead until a dough forms. Add more water as kneaded (see what I did there)
Step 4
- Cover this and let it rise somewhere warm for about an hour or so, or until the dough doubles in size.
Step 5
- Portion out the dough into 4 equal pieces. Shape into bagels and place on a parchment paper lined baking sheet. Let the rest for 15 minutes, while you bring a pot of water to a boil.
Step 6
- Stir in 2 tbsp of honey into the water.
Step 7
- Boil the bagels for 30 seconds on each side and transfer back to the baking sheet.
Step 8
- Mix together the crunch topping-3 tbsp of course cane sugar, 2 top of brown or coconut sugar, 1 tosp of maple sugar, 1 tosp of maple syrup, 1/2 tsp of cinnamon, 1 top of melted butter, a pinch of salt, and 1 tosp of flour. Sprinkle on top of the bagels.

- Bake on 400F for 30 minutes & enjoy!
