Black bean performance brownies
Idea: pressure cook a whole blood orange on high for 15 minutes. Blend the whole thing through the batter. Reduce other liquids to match (less egg white and water for the gelatin). Maybe boost cocoa powder or protein powder.

To blend
228gBlack beans
1 ½ tablespooncocoa powder
1 scoopprotein powder
1 teaspoonbaking powder
1 tablespoonbrown sugar
salt
100mlegg white
Oat milk
just enough so the batter pours slowly
8ggelatin
dissolved in 75ml water
To mix through the batter
To sprinkle over the top
Instructions
Step 1
Blend the first set of ingredients in a food processor until smooth. Add enough oat milk so it's runny enough that the batter pours slowly.
Step 2
Mix in the chocolate chips
Step 3
Spread batter out on a baking tray lined with baking paper, and sprinkle with crushed pistachios and flaky sea salt
Step 4
Fan oven 180 Celsius for 11 mins, until just set on the edges and still quite gooey in the centre. It will firm up as it cools.
