Instructions
Step 1
Place the roughly chopped onion, ground ginger and garlic into a good processor and blend until smooth. Transfer to a frying pan, add a splash of water and cook over medium heat for 4-5 minutes.
Step 2
Add the ground turmeric, cumin, coriander and chilli powder and continue to fry for 4-5 minutes.
Step 3
Crumble in the stock cube and stir in the chopped tomatoes, ground cinnamon, cardamon pods, cloves and bay leaves with 175ml warm water and a little salt and cook until the sauce thickens.
Step 4
Add the sliced onion, bring to the boil, reduce the heat and simmer for 20 minutes. Remove the bay leaves before serving.
Step 5
Add protein (ie prawns, chicken) and other vegetables (ie pepper) and serve with rice.
