Instructions
Step 1
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain, reserving 1/4 cup of pasta water for the sauce.
Step 2
In a large skillet over medium heat, add the pepperoni slices. Cook until they crisp up, about 2-3 minutes.
Step 3
In the same skillet, add 1/2 tbsp of gochujang butter and minced garlic. Sauté for 1-2 minutes, until fragrant and slightly golden.
Step 4
Pour in the heavy cream and bring it to a simmer, stirring occasionally for 2-3 minutes.
Step 5
Stir in the 1.5 tbsp of gochujang until fully incorporated into the cream, creating a smooth, spicy sauce. Let it simmer for another 2 minutes.
Step 6
Turn off the heat, add the grated parmesan cheese and stir until the sauce is creamy and smooth. If the sauce becomes too thick, add a bit of the reserved pasta water to reach your desired consistency.
Step 7
Add the cooked pasta to the sauce and toss until evenly coated. Season with salt and pepper to taste.
