Step 1
Heat a non-stick frypan over medium heat.
Step 2
Add onion and beef mince and cook for 5 minutes, breaking the mince up with a spoon.
Step 3
Add in the capsicum, garlic and taco seasoning and heat for another 5 minutes.
Step 4
On each tortilla, add beef mixture, cheese and spinach. Fold over to enclose the filling and then add to a pan over medium-high heat and cook for 1-2 minutes each side, until golden and crispy.
Step 5
Meanwhile, make guacamole by mashing together the avocado, yoghurt, lemon juice, salt and pepper.
Step 6
When ready to serve, top one quesadilla with 1/2 the guacamole. Store leftovers in the fridge.
