Instructions

Step 1
And the coconut milk, red curry paste, fish sauce, sugar, and pumpkin into the slow cooker and whisk to combine. Add the chicken

Cover and cook for 4 hours on high or 8 hours on low
Step 3
Once the chicken is done cooking, shred the chicken in the slow cooker and add the Bell pepper. Cook for 30 minutes on high
Step 4
Before serving, stir in the spinach and lime juice and let it cook until just wilted.
Step 5
Serve in bowls and season with salt and pepper. Enjoy

Optional: top with chopped peanuts and cilantro. Serve with rice.
