Ingredients

1.5 lbchicken
1 cupyogurt
1 Tbspgaram masala
1 Tbspsalt
1yellow onion
diced
6 clovesgarlic
diced or sliced
1 Tbspginger
diced
2 tsppaprika
2 tspcumin
1 ½ tspturmeric
optional
1can crushed tomatoes
⅔ cupwater
1 cupcoconut milk
other milk options work
2 Tbspbutter
salt
to taste
pepper
to taste
Cilantro
optional
white rice
cooked
2 Tbspoil
1 Tbspgaram masala
Instructions
Step 1
Combine yogurt, salt, and 1 Tbsp Garam masala to bowl with diced chicken. Marinate for at least 30 minutes up to overnight

Step 2
Take chicken and sear in pan for 2-3 minutes or until browned and set aside
Step 3
Add onion to the pan and cook for 3-4 minutes then add garlic and ginger. Cook for an additional 2 minutes
Step 4
Add paprika, cumin, remaining 1 Tbsp Garam Masala, and turmeric to the pan. Cook for 2-3 minutes
Step 5
Add crushed tomatoes and coconut milk to the pan and simmer for 5 minutes. Then add the coconut milk and simmer for an additional 3-4 minutes or until thickened. You may need to add a thickener at this stage. Xantham Gum works great.
Step 6
Add salt and pepper to taste, remove the pan from heat and add the butter. Continuously stir until the butter is melted.
Step 7
Serve over rice and top with cilantro.
