Instructions
Step 1
(FREEZER MEAL)Combine the ground beef, onion, taco seasoning, chili powder, zucchini, cooked rice, corn, green chilies, and diced tomatoes in a large freezer bag.
Step 2
In a separate medium bag, add the shredded cheddar cheese.
Step 3
Remove excess air and seal the opening of each bag.
Step 4
Staple the bags together above the seal. Place the taco rice in the freezer until you’re ready to start cooking.

Transfer the frozen taco rice to the refrigerator to thaw overnight.
Step 6
Warm a skillet over medium heat on the stovetop.
Step 7
Pour the ingredients from the large bag into the hot skillet and sauté until warmed through.
Step 8
Top with the cheddar cheese and continue cooking until the cheese is melted.
