Step 1
Preheat oven 200°
Step 2
Line a baking tray with parchment paper, add the diced vegetables and 1 tablespoon of olive oil, 1 tsp of salt. Stir well, roast for 15-20 minutes. Shaking occasionally.
Step 3
In a blender, add tofu, lentils, pepper, salt, yeast and tumeric. Blend until smooth and pour the mixture on top of the vegetables.
Step 4
Bake until set, approximately 15 minutes.
Step 5
Once set, top with Feta and Cilantro. Then slice into 8 portions.
Step 6
Place the tortilla on the counter. Spoon on your favourite salsa or dip, and top with the tofu and vegetables mix.
Step 7
Roll each burrito tightly, wrap in tinfoil to freeze and reheat/toast as required.
