Ingredients
6 servings

500gdried black turtle beans
soaked overnight, then drained

2onions
medium, finely chopped

3garlic cloves
minced

2carrots
medium, diced

1fresh chillies
finely chopped, adjust to taste

2 tspsmoked paprika

1 tspground cumin

1 tspground coriander

¼ tspground cinnamon
optional, for a subtle warming note

2bay leaves

1 x 400gcan chopped tomatoes

1 litrevegetable bouillon
or stock

2 Tbspolive oil

1juice of lime

salt
to taste

pepper
to taste

Fresh coriander
cilantro, chopped, for garnish
Instructions
Step 1
Heat the olive oil in a pan over medium heat.
Step 2
Sauté the onions, garlic, and carrots until softened (about 5 minutes).
Step 3
Add the smoked paprika, cumin, coriander, and cinnamon (if using) and cook for 1 minute to release the aromas.
Step 4
Transfer the sautéed mixture to the slow cooker.
Step 5
Add the soaked black beans, chopped chillies, canned tomatoes, vegetable bouillon, and bay leaves. Stir to combine.
Step 6
Cover and cook on low heat for 8-10 hours or on high heat for 4-6 hours, until the beans are tender.
Step 7
Stir occasionally if possible, adding more water or stock if the stew gets too thick.
Step 8
Once the beans are cooked, season with salt, pepper, and lime juice to taste.
Step 9
Remove the bay leaves.
Step 10
Ladle into bowls and garnish with fresh coriander.
Step 11
Serve with crusty bread, rice, or a dollop of sour cream if desired.
