Instructions
Step 1
heat pan, add oil and onions. saute for 2-3 minutes.
Step 2
Add diced capsicum and garlic. Saute for another minute
Step 3
Add spices and herbs and cook for 1 minute.
Step 4
Add cauliflower rice and mix thoroughly to coat cauliflower as much as possible with spiced vegetable mix.
Step 5
Add tomato paste, 1/2 the stock and the black beans. Mix through. reduce to medium low heat and cook for about 5 minutes.
Step 6
Liquid will escape from the cauliflower to check and top up with remaining stock intermittently and add more if required. It should be a dry-ish end result, but is still good if its a bit more wet.
