4garlic cloves

ginger
2.5 c m, minced

2onions
medium, finely sliced

10curry leaves

1green chili
halved and deseeded

4black peppercorns
cracked

1 tspcoriander seeds
crushed

½ tspturmeric powder

1 tspgaram masala

½ tspfreshly ground black pepper

salt

Instructions
Step 1
Rinse lentils until water runs clear
Step 2
Cube chicken breast into 2.5cm pieces
Step 3
Drain and rinse chickpeas
Step 4
Heat 1 tbsp coconut oil in large pot over medium
Step 5
Sauté onions, curry leaves, chili, peppercorns until golden (10 mins)
Step 6
Add garlic-ginger paste, cook 3 mins
Step 7
Stir in all dry spices, cook 2 mins
Step 8
Add chicken, cook 5 mins
Step 9
Add lentils, chickpeas, 400ml water
Step 10
Simmer covered 15 mins
Step 11
Stir in spinach, bell pepper last 5 mins
Step 12
Fold in Greek yogurt off heat
Step 13
Check seasoning
Step 14
Serve over cauliflower rice
Step 15
Garnish with cilantro, extra yogurt
