Prepare ingredients
Step 1
Peel and devein the prawns, rinse them under cold water, and pat dry. Set them aside.
Sauté aromatics

Heat 1-2 tbsp oil in a large skillet over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Then add the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
Add spices

Sprinkle in the curry powder, turmeric and cumin. Stir the spices well and cook for about 1 minute to release their flavors, being careful not to burn them.
Add coconut milk

Pour in the coconut milk and stir to combine with the spices. Bring the mixture to a gentle simmer and let it cook for 5-7 minutes, allowing the flavors to meld.
Cook the prawns
Step 5
Add the prawns to the skillet and stir them into the curry sauce. Cook for 3-4 minutes, or until the prawns turn pink and opaque, being careful not to overcook.
Season and serve
Step 6
Season with salt to taste, then remove from heat. Garnish with freshly chopped cilantro and serve hot with steamed rice or naan.
