Color-Changing Purple Cream Soup πŸ’œπŸ’– I have received so much love on my previous two color soup that I decided to create another version πŸ’œ Let me know which one you like better 😏 This dreamy soup starts as a deep purple and transforms into a stunning pink when you squeeze fresh lemon on top. It’s creamy, cozy, full of vibrant colors and has only 170kcal per portion. πŸ’– Ingredients: for 2 portions πŸ’œ 1/2 head of purple cabbage 1/2 onion 1 garlic clove 4 cups vegetable broth 1tbsp oil 1tbsp vinegar Salt&pepper 100ml vegan cream ( or coconut milk)+1tbsp for topping 1/2 juice of lemon Croutons ( optional) Method:πŸ’œ 1. Chop cabbage, onion and garlic. 2. In a pot fry onion, 1 garlic clove, then add chopped cabbage and 4 cups broth. Simmer for 20min. Add salt, pepper, vinegar. 3. Stir in vegan cream and blend everything. 4. Pour the cream into a plate and squeeze some fresh lemon juice. Make swirls with a spoon and top with more cream and croutons. Enjoy πŸ’œ β€’ β€’ β€’
