Step 1
Shred leftover beef and gently reheat in a skillet with a bit of its jus
Step 2
Let the jus reduce slightly if you want to create a dipping sauce
Step 3
Heat a skillet or griddle over medium
Step 4
Lightly brush each tortilla with the jus or olive oil (both sides)
Step 5
Place cheese on one side of the tortilla, add shredded beef, then fold in half
Step 6
Cook each taco 2–3 minutes per side, until golden and crispy and cheese is melted
