Kuku Sabzi is a vibrant persian herb frittata or omelet traditional served during the Persian new year (Nowruz). It is distinguished by abundance of fresh herbs, minimal eggs and optional additionsklr walnuts or barberries for extra flavour and texture.

Ingredients
4 servings

5eggs
large

2 cupsfresh flat leaf parsley
leaves only chopped

1 cupfresh dill
chopped

6scallions
trimmed and chopped

1 cupfresh spinach
Optional, finely chopped

½ cupwalnuts
Optional, toasted and chopped

⅓ cupdried barberry
Optional, or cranberry coarsely chopped

1 ½ Tbspbaking powder

salt
to taste

½ Tbspground Black pepper

½ Tbspground cumin

¼ Tbspground turmeric

6 Tbspolive oil
for frying

4garlic cloves

Instructions
Prep the herbs
Step 1
Wash and thoroughly dry all herbs and greens.
Step 2
Remove thick stems from parsley and dill
Step 3
Chop all herbs finely
Mix the batter
Step 4
In a large bowl whisk eggs with baking powder, salt, pepper, cumin and turmeric until well blended
Step 5
Stir in chopped herbs, scallions (and spinach if using).
Step 6
Fold in walnuts and barberries or cranberries if using
Cooking on stovetop
Step 7
Heat 3-4 tbsp olive oil in a nonstick or cast iron skillet over medium heat
Step 8
Pour in herb-egg mixture
Step 9
Spread evenly and cover with lid
Step 10
Cook on medium-low heat for 15-20 minutes until set and bottom is golden brown
Step 11
Carefully flip and cook other side for 5-10 minutes
Serve
Step 12
Slice into wedges
Step 13
Serve warm at room temperature or cold
