Creamy Broccoli Pasta

Turns out pasta can be healthy, and this Creamy Broccoli Pasta does not disappoint! Packed full of flavor and wholesome ingredients, this is a must-try weeknight dinner. Ingredients 2 heads broccoli, cut into florets 1 cup pasta of choice, cooked 1/4 cup almond milk, or milk of choice 3 tbsp olive oil 1 tbsp parmesan cheese, shaved, to serve (optional) salt, to taste black pepper, to taste chili flakes, to taste parmesan cheese, grated, to garnish basil leaves, to garnish Directions Step #1: Add the broccoli florets to a pot of boiling water and boil until they're cooked through. Alternatively, steam the florets in a steaming basket until they're cooked. Step #2: Meanwhile, cook the pasta in a pot of salted water on the stove according to the packet instructions. Once cooked, strain the pasta. Set aside. Step #3: Place the cooked broccoli in a food processor and blend until it forms a creamy consistency. Add your milk of choice, olive oil, salt, and pepper. Blend again. If the sauce is too thick, add 1-2 tbsp water. Step #4: Add the broccoli sauce to the mixing bowl with the pasta. Stir to coat the pasta. Step #5: To serve, top the pasta with Parmesan cheese and fresh basil.
