Instructions

Step 1
1. Put the water and oil into the bread machine.

2. Add the flours and seeds.
Step 3
3. Add the salt to one corner and the yeast to the opposite corner.

4. Set the machine to “dough” mode. Let it mix and rise

5. When the cycle finishes, tip the dough onto a floured surface. .

6. Cut into 8 pieces. Handle gently—don’t knead

7. Put onto a floured or lined tray. Dust with flour or seeds.
Step 8
8. Cover with a tea towel and let rise 30–45 mins.
Step 9
9. Heat oven to 220°C (fan 200°C). Put a tray of water in the bottom.
Step 10
10. Bake for 20–25 mins until golden and hollow-sounding
