Vegan Chicken and Dutch Mini Pancakes (chick’n n’ poffertjes) / Vegan Chicken and Waffles

Make vegan pancake batter and cook it in a poffertje pan or bake in silicone cake pop mold. This recipe includes info for baked poffertjes, pan fried poffertjes, and fried chicken oyster mushrooms. Fry up vegan chicken in air fryer.

Instructions

Step 1
For silicone cake pop mold pan or muffin pan, make baked poffertjes: Make the chia egg by mixing 1 Tbsp of ground chia seeds with 3 Tbsp of warm water Wait for the chia egg to thicken and mix the chia egg with 1 2/3 cup (200g) flour and 1 1/2 cups (350ml) plant-based milk.
Grease a silicone pan with plant-based butter or oil and add small amounts of the batter.
Bake the mini pancakes for a couple of minutes and flip them to the other side when the top is dry.
Bake a couple of minutes longer until the inside is cooked and remove the mini pancakes from the pan. Tip: In a pinch, you might be able to use the bottom half of a muffin pan if you don't have a cake pop mold pan.

For pofferje pan or waffle iron or regular pancake sized poffertjes in a skillet, make fried poffertjes:
1. In a large bowl, mix together the 2 heaping cups soy milk, 2 Tbsp sugar, 1 1/2 tsp instant yeast, and 1 Tbsp oil. Add the 1 cup flour, 1 cup buckwheat flour, and 1/2 tsp salt and mix into a smooth batter. Cover the bowl with a towel and let sit for about an hour.
2. Just before the batter has finished resting (it won’t rise very much), put your greased poffertjespan (see below) on the stove over low heat (Wikipedia says high heat, but I prefer to start with low…) until it’s very hot. If you’re cooking the poffertjes in a waffle iron, you may want to follow the instruction manual, but I just cooked mine at the middle setting and that worked fine.
3. Scoop the batter into the indentations in the pan: I use a measuring spoon and use about a tablespoon of batter per poffertje. Flip the poffertjes when the tops are dry and the bottoms are browned — this can go very quickly, so make sure you watch them. If they stick to the pan, just use the corner of your spatula and gently try to pull them out.
4. Once the poffertjes have been cooked on both sides, remove them from the pan, add a new coating of oil if necessary and repeat the process with the remaining batter.

You will need: A few large oyster mushrooms
Oil for frying Wet mix: Flour 3:2 ratio to oat milk
Italian herbs
Black pepper
Onion powder
Garlic powder
Salt Dry mix: Flour
Black pepper
Coriander
Italian herbs
Chives
Onion powder
Garlic powder Wash your mushrooms gently so they keep their shape. Dip your mushroom in wet mix, then coat in the dry mix. Repeat for the rest, then heat oil. Cook your coated mushroom in the oil, for 2-3 minutes each side, flipping in between. Drain excess oil then serve.
