Instructions
Step 1
Mince cilantro. Stem, seed, and medium dice bell pepper. in a bowl, stir cornstarch and 1.5 tsp water until dissolved.
Step 2
Place medium pot over medium-high heat and add 2 tsp olive oil. Add bell pepper, onions, most of the cilantro, and .25 tsp salt to pot. Stir occasionally until onions are tender, 3-4 minutes.
Step 3
Stir cornstarch mixture4 again to recombine. Add carnitas, 1 cup water, chicken base, corn, tomatillo salsa, and cornstarch mixture to pot. Bring to a simmer. Stir occasionally until pork is warmed through and liquid thickens slightly, 3-5 minutes. If too thick, add water, 1 tsp at a time, until desired consistency.
Step 4
Serve mixture in a bowl, garnishing with sour cream, cheese and remaining cilantro.
