Cheesy Broccoli Tortellini

This is a go to recipe for nights I need something quick. I don’t always use the same spices or vegetables. Feel free to use whatever you have on hand. I’ve even used turkey bacon in place of prosciutto. You use what you have!

Instructions
Step 1
Put the water to cook the tortellini on to boil.
Step 2
Dice the prosciutto and in a large pan cook over medium heat. You can add a tablespoon of olive oil but it isn’t strictly necessary because the prosciutto will release grease.
Step 3
Add in the minced garlic and cook for one minute.
Step 4
Add in the frozen mixed veggies, the fresh or frozen broccoli, onion powder, red pepper flakes, Italian seasoning and 1 C of veg broth. Cook until the veggies are soft and cooked through. Add salt if needed.
Step 5
Add the mascarpone, cheddar and Parmesan cheeses and stir until melted.
Step 6
The sauce should be a slightly thick cheesy base at this point. Drain your tortellini and reserve some pasta water. Add the tortellini to the sauce/veggie mixture and stir to combine. Add pasta water if the sauce isn’t loose enough.
Step 7
Top with the last 1/2 C of cheddar cheese and cover to allow to melt. Turn the heat off while you do this. Once melted, serve hot.
