Pumpkin, orange and turmeric soup

Instructions
Step 1
Wash all vegetables and chop the onions, garlic cloves, carrots, leeks and peeled pumpkin.
Step 2
In a large pot, add the chopped vegetables, turmeric, olive oil, salt and water.
Step 3
Bring to a boil, then reduce heat and let it simmer for about 30 minutes, or until the vegetables are very soft.
Step 4
Add in the orange zest.
Step 5
Blend the soup until smooth. Taste and adjust salt and water if needed. Serve hot.
Step 6
Chop the spring onions and serve on top.
