Step 1
Preheat the oven to 425°F (220°C).
Step 2
Cut potatoes into 1/2-inch rounds. Toss with oil, Italian seasoning, salt, and pepper. Roast until golden-brown, 25-28 minutes.

Slice chicken breasts lengthwise without cutting through. Season with salt and pepper.

Coat chicken with mayonnaise and then panko breadcrumbs.

Pan-fry chicken until golden-brown, 2-3 minutes per side, transfer to a baking sheet.

Spoon marinara sauce over chicken, sprinkle with Parmesan. Bake until chicken is cooked and cheese is golden-brown, 12-14 minutes.
Step 7
In the same pan, melt butter, add broccoli and water. Cover and cook until tender, add garlic and cook until fragrant.
Step 8
Serve chicken with crispy potatoes and garlicky broccoli.
