Instructions

Step 1
Preheat the oven to 400°F (200°C).
Step 2
Cut cauliflower into florets and toss with olive oil, salt, and pepper. Roast in the middle of the oven for 14-16 min until golden-brown.
Step 3
Meanwhile, bring 10 cups of water to a boil in a large pot. Add rigatoni pasta and some salt. Cook until tender, about 16 minutes.
Step 4
Reserve 1/2 cup of pasta water and drain the pasta. Return to the same pot.
Step 5
In a separate pan, cook bacon strips until crisp. Remove and set aside.
Step 6
Add chopped onion to the bacon fat and sauté until translucent.
Step 7
Add roasted cauliflower, bacon, triple cheddar cheese, sour cream, and reserved pasta water to the pasta. Stir to combine off heat.
Step 8
Season with salt, pepper, and chi flakes to taste.
Step 9
Garnish with chopped chives and serve immediately.
