Boil noodles Heat oil until very hot. Add garlic, ginger, and chilli flakes if using. Fry for 30 seconds until fragrant. Toss in prawns, stir-fry 2–3 mins until just pink. Remove and set aside so they don’t overcook. Add peppers to the pan and cook 2 mins, then add bok choi. Stir-fry until just tender but still with crunch. Return prawns, add noodles, soy sauce, oyster, lemon juice and honey. Toss everything well until heated through. Taste and adjust seasoning with more soy, squeeze of lime, or pinch of sugar. Sprinkle sesame seeds on top and serve
