Step 1
In a large bowl, combine flours, salt, and yeast.

Add lukewarm water and honey, mixing till combined.
Step 3
Knead the dough until smooth, then cover it.
Step 4
Let dough rise in a warm place till doubled in size.
Step 5
Deflate the dough gently.
Step 6
Shape into a round loaf, using the work surface for friction.
Step 7
Place shaped dough on parchment paper.
Step 8
Brush with water, then cover with seeds if desired.

Cover and let rise for 1-1 1/2 hours or until loaf is puffy.
Step 10
Using a sharp knife, make slashes on the loaf.
Step 11
Preheat the Dutch oven and place the bread gently inside.

Cover and bake for 25 minutes.
Step 13
Remove the lid and bake an additional 25 minutes.
Step 14
Transfer baked bread to a cooling rack.
