Pasta Cremosa al Salmone

Instructions

Step 1
Prepare the Shallots and Garlic:

Slice the shallots and garlic into thin rings. Sauté them in a pan with olive oil and a bit of tomato paste.

While this is cooking, prepare the pasta according to the package instructions.

Prepare the Vegetables:

Slice the cherry tomatoes in half and chop the asparagus into small pieces.

Combine Vegetables and Ricotta:

Add the cherry tomatoes, asparagus, lemon zest, and lemon juice to the pan. Season with salt and pepper.

Cook for 2-3 minutes until the vegetables are tender. Stir in the ricotta to combine into a creamy sauce.

Add Salmon and Pasta:

Once the vegetable mixture is nearly done, add the smoked salmon (roughly chopped) and the cooked pasta. Pour in a splash of pasta water to help create a creamy sauce.

Stir everything well until the pasta is fully coated.

Serve immediately, garnished with additional lemon zest or fresh herbs, if desired
