Instructions

Step 1
Heat olive oil over medium high heat and add sausage. Fry 5-7 minutes or until done.
Step 2
Whisk eggs and seasonings and add to sausage. Cook over medium heat WITHOUT stirring until it begins to set on bottom and edge.
Step 3
Lift and fold one half of mixture so uncooked eggs flow underneath. Cook until almost set and add tomatoes.
Step 4
Cook about 1 minute longer or until eggs are cooked and still glossy.
Step 5
Serve with cherry tomatoes and lettuce. Enjoy!
