2 cupsorzo
rinsed and cooled
1english cucumber
sliced into half moons
2 cupsgrape tomatoes
halved
1yellow bell pepper
diced
0.5red onion
diced
1 cuppitted kalamata olives
halved
1 cupfeta crumbled
¼ cupfresh parsley
chopped
0.5lemon
zest and juice
Instructions
Step 1
Prepare the vinaigrette by whisking together olive oil, lemon juice, red wine vinegar, honey, minced garlic, parsley, dill, salt, and pepper.
Step 2
Cook the orzo according to the package instructions, rinse under cold water, and cool.
Step 3
In a large bowl, combine the cooked orzo, cucumber, grape tomatoes, bell pepper, red onion, olives, and feta.
Step 4
Pour the vinaigrette over the salad and toss to combine.
Step 5
Garnish with parsley and lemon zest before serving.
