Batter
50gchickpea flour
100gsoy milk

Filling
2 Tbsponion
finely chopped
2 Tbspcherry tomatoes
diced
2 Tbspmushrooms
chopped
2 Tbspspinach
chopped
2 TbspVegan Feta
crumbled, added on top of filling before folding

Instructions
Step 1
Prepare filling: Heat ½ tsp oil in a small pan.
Sauté onions, peppers, mushrooms, and spinach until softened and lightly caramelized.
Set aside.
Step 2
Prepare batter: Whisk chickpea flour, soy milk, turmeric, black salt, and pepper until smooth. Batter should be thick but pourable — adjust with a tiny splash of soy milk if needed.
Step 3
Cook omelette: Heat ½–1 tsp oil in a nonstick pan over medium heat.
Pour in batter and spread evenly to form a thick, round omelette.
Cook 3–4 minutes until the bottom is golden and edges are set.
Step 4
Assemble 3-fold omelette: Place the pre-cooked veggie filling in the center of the omelette.
Sprinkle Vega Feta on top of the filling.
Fold the sides over the filling in three sections (tri-fold).
Cook 1–2 minutes more lightly to set the folds.
Step 5
Serve: Slide onto plate immediately.
