Spaghetti (Squash) & (Gluten Free) Meatballs

Who doesn't love spaghetti and meatballs? Lately I've been obsessed with spaghetti squash, also making Spaghetti Squash Lasagna Boats and Chicken Pad Thai with Spaghetti Squash. But today I'm making spaghetti and meatballs with spaghetti squash, gluten free beef meatballs, and homemade pasta sauce. Feel free to also pair this with some standard pasta as well!

¼ cupparmesan cheese

6gbasil
dried
6goregano

Instructions
Step 1
Preheat your oven to 400F, and line 2 large cookie sheets with parchment paper (one for the squash, and the other for the meatballs)
Step 2
Cut your squash in half lengthwise. Scoop out the seeds with a spoon, season the squash (basil, oregano, salt, and pepper), and add to the sheet cut side down. Prick the top with a fork
Step 3

Roast the squash at 400F for about 1 hour, or until fork tender
Step 4
Meanwhile, in a large bowl, mix together your meatball ingredients - ground meat, egg, oat flour, cheese, basil, oregano, salt, and pepper
Step 5

Scoop your meat mix into 30 meatballs, about 24 g each. Roll into a ball, and place on the other cookie sheet
Step 6
Roast the meatballs at 400F for about 16 minutes, or until the internal temperature is at least 160F
Step 7

Serve your spaghetti squash and meatballs with sauce and optionally some pasta
