Yellow rice with vegtables

Instructions

Step 1
preparation.: Cut/mince, onion, pepper, carrots, mushrooms into small squares ( or any size you prefer). + Wash the rice and let it soak for at least 15 minutes.
Step 2
In a pot,at a medium heat, pour olive oil and let it heat a bit, then add the onions and Stir it till it is sauté.
Step 3
Add the carrots and Stir it for a minute or two, then add the pepper and stir it again for less than a minute.
Step 4
add the mushrooms, corn, and peas. Mix all the mixture together for less than a minute.
Step 5
Then strain the rice from it's water and add it to the mixture. Mix the rice with the vegetables together for a minute.
Step 6
Then add the spices, pinch of black pepper, 1 teaspoon turmeric, 1 teadpoon curry, pinch of salt, pinch of cinnamon (optional). Then stir them all together.
Step 7
add hot boiling water until it's 1 cm above the rice level. Add salt
Step 8
Let it boil until the water level is on the same level surface as the rice. Then cover the pot and lower it to the lowest heat and let it until the water is almost gone.
Step 9
Then turn off the stove and serve it on a plate.( If you want you may add few pieces of parsley above the rice.)
