Instructions

Step 1
Smashed Steak: Heat olive oil in a large skillet over medium-high heat. Add steak in loose portions and smash flat with a spatula. Season with smoked paprika, garlic powder, onion powder, salt, and pepper. Cook until deeply browned with crispy edges. Flip, smash again, and cook until juicy and caramelized.
Step 2
Cowboy Butter: In a bowl, whisk together melted butter, garlic, parsley, Dijon mustard, red pepper flakes, and lemon juice until glossy, aromatic, and rich.
Step 3
Pour cowboy butter over the hot smashed steak and toss until every crispy bite is drenched in bold, buttery flavor. Remove from heat.
Step 4
Garlic Lava: In a saucepan over medium heat, melt butter and sauté garlic until fragrant. Pour in heavy cream and gently simmer. Stir in Parmesan, smoked paprika, cayenne, and salt until thick, smooth, and dripping with spicy garlic heat.
Step 5
Assemble Burritos: Lay tortillas flat. Sprinkle mozzarella and Monterey Jack down the center. Add cowboy butter steak and drizzle generously with spicy garlic lava. Fold tightly into burritos.
Step 6
Heat a clean skillet over medium heat. Place burritos seam-side down and cook until deeply golden, crispy, and melty inside. Flip once to crisp both sides evenly.
Step 7
Slice burritos in half and drown with extra spicy garlic lava. Crispy, buttery, cheesy, and explosively rich—these smashed steak burritos bring full cowboy heat to every bite.
